Curry Puff

Who doesn't like curry puffs? Here again, the pastry is the most important part of the game. You can do the water and oil dough pastry or you can just do the puff pastry but curry puff pastry needs to be beautiful and right. The crimping of the pastry edges to seal the filling in is also very important. Some use the plastic molds but I find that so difficult and although it seals the edges for you as you clamp that mold down but it is not beautiful. I believe food presentation is very important besides the taste.

Here is my version of the curry puff with beautifully crimped edges - all made by hand!
